Location
This Gruyère is produced in Switzerland, in the mountains of Swiss Jura, by the Von Mühlenen family.
Tasting
This flavour is bold, sweet, and balanced with floral and fruity notes. Its silky texture is contrasted with crunchy crystals. The round flavour is achieved through 14 months of cave aging, followed by maturation time in natural cellars.
Pairing
Accentuate the floral and fruit flavours with Rosebud preserves, fruit jams, honey, or fruit like apples or dried apricots. Add Cherry Almond Linseed Toasts, for a sweet and savoury pairing. Nuts such as almonds or hazelnuts add a crunchy, salty contrast. Consider pairing this with an earthy Pinot Noir, with notes of cherry, red fruits, mushrooms, and forest floor. Or consider an acidic white wine that will cut through the richness of the cheese, such as Loire Valley Sauvignon, Riesling, or a wine from Alsace, France.
Recipe
Easy Gruyère Fondue:
- 400g Gruyère cheese, grated
- 1 garlic clove, halved
- 300ml dry white wine
- 1 tbsp lemon juice
- 2 tsp cornflour
- 2 tbsp kirsch (optional)
- Black pepper and nutmeg, to taste
- Cubed bread and vegetables, for dipping
Instructions:
- Prep: Rub the inside of a fondue pot with the garlic halves.
- Heat: Simmer wine and lemon juice in the pot.
- Melt: Gradually add cheese, stirring until smooth.
- Thicken: Mix cornflour with kirsch or water, stir into the cheese mixture until thickened.
- Season: Add pepper and nutmeg to taste.
- Serve: Keep warm and serve with bread and vegetables for dipping.
