48 hours of smoking on Beechwood lends this artisan cheddar flavours of coffee and caramel, adds a delicious complexity to this grassy cheddar.
Pairing
This would pair incredibly with powerful red wines that match the weight of the wine, such as Bordeaux Reds, Zinfandel, Malbecs, Shiraz, or Rioja. Olives would beautifully accompany the smoky flavours, while fresh grapes or fig jams would offer a sweet contrast.

Easy Mac & Cheese with Westcombe Smoked Cheddar
Ingredients:
- 250g macaroni
- 30g butter
- 30g plain flour
- 500ml milk
- 200g Westcombe Smoked Cheddar, grated
- Salt and pepper to taste
Optional Add-Ons:
- Cooked bacon bits
- Sliced spring onions
- Chopped parsley
- Sautéed mushrooms
- Smoked paprika
- Chopped tomatoes
- Breadcrumbs
Instructions:
- Cook pasta: Boil macaroni until al dente, drain, and set aside.
- Make sauce: Melt butter in a saucepan, stir in flour to form a roux, and gradually whisk in milk until thickened.
- Add cheese: Remove from heat, stir in grated cheese until melted, and season with salt and pepper.
- Combine: Mix pasta with cheese sauce until well coated.
