Location
Produced by Jonny Crickmore in Suffolk, Baron Bigod is a brie-style cheese made from the milk of Montbeliarde cows. Jonny’s family has been farming for three generations, and his venture into cheese-making marked a significant shift. To produce top-quality cheese, Jonny sourced Montbeliarde cows from France, known for their high-protein milk essential for famous French cheeses like Comté. This breed was crossbred with the family’s Friesians, enhancing the herd’s quality.
Tasting
Baron Bigod is noted for its rich, earthy taste and lasting finish. The cheese is best when its wrinkly exterior matures to unveil a creamy, buttery texture beneath, with a core of delicate curd. The combination of these textures and flavours creates a truly luxurious cheese experience.
Pairing
Baron Bigod pairs wonderfully with a variety of accompaniments. Enjoy it with fresh baguette slices or artisanal crackers. It also complements fruit preserves, honey, and nuts, enhancing its rich, earthy flavors. For a delightful beverage pairing, try it with a crisp white wine, sparkling wine, or even a light-bodied red.
Recipe
Baron Bigod’s creamy and buttery texture makes it an excellent addition to many recipes. Use it as a decadent topping for a gourmet pizza or melt it over roasted vegetables for a rich, savory dish. It also works beautifully in a baked cheese tart or as a luxurious addition to a cheese board.
