Alp Blossom is crafted in the picturesque Alpine region, where the high-altitude pastures offer a rich and diverse source of flora. This traditional Swiss cheese is made with cow’s milk, using methods that have been passed down for generations. The mountain air and the abundance of wildflowers contribute to the cheese’s distinctive flavour and aroma.

Tasting

Alp Blossom is a semi-hard cheese with a smooth, creamy texture. Its flavour is vibrant and herbaceous, thanks to the edible alpine flowers that adorn its rind. The cheese has a subtle sweetness and mild tanginess, with hints of fresh grass, wildflowers, and the natural richness of the cow’s milk. The flowers add a delicate, floral fragrance and a touch of earthiness to the taste with the oregano and garlic additions to the rind.

Pairing

This aromatic cheese pairs wonderfully with a Rosé making it the perfect pairing for Spring and sunshine. It also goes well with a crisp lager or a refreshing pale ale. For a perfect snack, serve it with fresh baguette slices, roasted nuts, or seasonal fruits like figs and grapes. A drizzle of Deukes Honey also complements its floral notes beautifully.

Recipe

Alp Blossom & Apple Tart
Ingredients:

  • Alp Blossom, sliced
  • 2 large apples, thinly sliced
  • 1 sheet of puff pastry
  • 1 tbsp olive oil
  • 1 tsp honey
  • Fresh thyme leaves
  • Sea salt to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the puff pastry onto a baking sheet lined with parchment paper.
  3. Arrange the thinly sliced apples in a circular pattern on the pastry.
  4. Tear or slice Alp Blossom and place it evenly over the apples.
  5. Drizzle with olive oil and a touch of honey, then sprinkle fresh thyme leaves and a pinch of sea salt over the top.
  6. Bake for 20-25 minutes until the pastry is golden and the cheese has melted.
  7. Serve warm for a delightful dessert or savoury snack.
