Brightwell Ash is a delicate artisan goat’s cheese crafted by Fraser Norton and Rachel Yarrow at the Earth Trust Farm in South Oxfordshire. Inspired by traditional French cheesemaking techniques, this exceptional cheese is made using milk from their own herd of pedigree Anglo Nubian goats, ensuring exceptional quality and freshness.
Tasting
Brightwell Ash delights with its fresh, tangy flavour and silky texture. Its signature ash-coated rind, which develops charming wrinkles and a natural mould as it ages, adds depth and character while reflecting subtle seasonal variations.
Pairing
Perfect on a cheese board, Brightwell Ash pairs beautifully with fresh strawberries, nuts, or artisan crackers. For beverages, its bright and tangy notes shine alongside crisp white wines, dry Rieslings, or a refreshing rosé.

Brightwell Ash and Honey Crostini
Ingredients:
- 1 Brightwell Ash cheese
- 1 baguette, sliced thinly
- 2 tbsp honey
- Fresh thyme leaves (optional)
Instructions:
- Preheat oven to 180°C (160°C fan). Lightly toast baguette slices until golden.
- Spread a generous slice of Brightwell Ash onto each crostini.
- Drizzle with honey and sprinkle with thyme leaves if desired.
- Serve immediately as a starter or part of a cheese platter.
