Hailing from Normandy, this unpasteurised cheese is crafted using traditional methods. The process begins with raw milk from Normande cows, which graze on the region’s lush pastures. This grazing method infuses the cheese with a unique flavor, reflecting the local terroir.
The curd is carefully ladled into molds in five stages, each separated by 40-minute intervals. This method, known as “moulage à la louche,” creates the cheese’s signature texture. After molding, the cheese matures for at least 35 days. During this time, it develops its creamy consistency and complex flavors. The rind, which can be white or red, adds an earthy aroma and savory depth to the cheese.
As it matures, Camembert de Normandie AOP becomes irresistibly oozy. At its peak, it spreads luxuriously on bread or crackers.
