Location

Based in Cornwall, England, Lynher Dairies has been producing cheese since the 1980s. They also received the Kings Award for Enterprise in Sustainable Development in 2024, a testament to their commitment to artisan cheese.

Tasting

Cornish Kern has been derived from a Gouda-style cheese, enhanced with Alpine starter cultures. The curds are scalded to create a caramelised flavour, after which it is pressed into large moulds. After brining and coating in wax, the cheese is matured for over 20 months. It has a deliciously nutty, deep, round flavour.

Pairing

This cheese is creamy and nutty with caramelised flavours, so it would pair beautifully with fruit jams or fresh fruits, such as grapes or figs. This would pair well with sparkling wines, including Champagne, Cava, and Prosecco, as the crisp bubbles balance the creaminess of the cheese. Fortified wines, such as Sherry and Port, make for bold pairings. Or consider Italian Soave or French Picpoul which would beautifully balance and accentuate this Cornish Kern.

Recipie

Ingredients:
  • 4 slices crusty bread (e.g., sourdough)
  • 200g Cornish Kern cheese, grated
  • 2 tablespoons butter, softened
  • 1 teaspoon Dijon mustard (optional)
  • A handful of rocket (optional)
Instructions:
  1. Prepare Bread: Spread mustard on one side of each bread slice (if using).
  2. Assemble: Divide half the cheese between two slices of bread, add rocket (if using), then top with remaining cheese and bread.
  3. Butter: Spread butter on the outside of each slice.
  4. Cook: Heat a frying pan over medium heat. Cook toasties for 3-4 minutes per side until golden and crispy.
  5. Serve: Let rest briefly, then slice and enjoy!

Perfect with a side salad or any vegetable soup.
