Ingredients:
200g pasta (fettuccine or tagliatelle)
150g Délice de Bourgogne cheese
1 tbsp olive oil
1 shallot, finely chopped
2 cloves garlic, minced
100ml double cream
50ml vegetable or chicken stock
50g grated Parmesan cheese
Salt and black pepper
Fresh parsley, chopped
Instructions:
Cook Pasta:
Boil pasta in salted water until al dente. Reserve 1 cup pasta water, drain.
Prepare Sauce:
Heat olive oil in a pan over medium heat.
Sauté shallot until translucent. Add garlic, cook 1-2 mins.
Melt Cheese:
Reduce heat, add Délice de Bourgogne. Stir until creamy.
Combine Ingredients:
Add cream and stock, stir to smooth. Mix in Parmesan, salt, and pepper.
Mix with Pasta:
Toss pasta with sauce. Add reserved pasta water if needed.
Serve:
Plate pasta, garnish with parsley. Serve immediately.
