Location
Killeen Goat Gouda is made on the Killeen Farm, located in County Tipperary, Ireland. This family-run farm is known for its commitment to sustainable practices and high-quality goat’s milk. The lush green pastures of Ireland provide the perfect environment for the goats, resulting in rich, flavourful milk that forms the basis of this unique cheese.
Tasting
This semi-hard cheese has a firm texture with a smooth, creamy mouthfeel. The flavour is rich and buttery with a slight tanginess from the goat’s milk, balanced by a nutty, slightly caramelized taste that comes from the Gouda-style aging process. The longer it matures, the deeper and more complex the flavours become, with hints of grass and a subtle earthy note.
Pairing
Killeen Goat Gouda pairs beautifully with a variety of beverages, including a crisp white wine like Sauvignon Blanc or a fruity red such as Pinot Noir. It also complements a glass of cider or a pale ale. For the perfect snack, enjoy it with crackers, fresh fruits like apples and grapes, or even a drizzle of honey for a sweet contrast.
