History and Winemaking
Casa Vinicola Botter, established in 1928, produces Sauternes in the Sauternais region of Bordeaux. The winery avoids chemical interventions in vineyard management and embraces renewable energy, reinforcing their sustainable and ethical mission. Predominantly made from Sémillon grapes and often blended with Sauvignon Blanc and Muscadelle, Sauternes stands out due to the presence of botrytis, or noble rot, which dehydrates the grapes, concentrating sugars and flavors. Hand-harvesting in multiple passes through the vineyard ensures only noble rot-affected grapes at peak ripeness are selected. Consequently, this meticulous process results in intense sweetness, complex flavors, and a characteristic golden color.
