About Fine Cider

Fine cider, crafted similarly to champagne through the traditional method, starts with selecting the right apple varieties. Therefore, producers harvest, crush, and press these apples to extract juice, which then ferments, turning the sugars into alcohol. This means that fine cider features a secondary fermentation right in the bottle, just like champagne. By adding a mix of sugar and yeast, this secondary fermentation generates carbon dioxide, infusing the cider with its characteristic bubbles. The cider ages on its lees, gaining complexity and depth of flavour. Producers then riddle and disgorge the cider to clear out yeast sediment, ensuring a refined finish.
